Gubadia – Губадия – By Giuzel Gaffanova

As part of our SurvivalBG's Recipe contest we introduce Giuzel's Gubadia (Губадия).

Gubadia is a traditional pie in the Tatar and Bashkir national cuisine. Its peculiarity is that it is unopened, round and multi-layered. The pie is mostly made sweet and served for tea. However, gubadia can also be with meat filling and served as a second course. Gubadia is prepared on holidays, for weddings, when celebrating naming and meeting welcome guests. According to the ritual meaning, such a pie is close to Russian karavai.

The Ingredients needed:

250 g butter

1-2 eggs

1 glass of water/milk

Salt

Flour

2 glasses of rice

Dried fruits

Time to prepare it:

1 Hour and 30 minutes.
The craft of cooking them:

Filling:

Boil rice with salt till it is ready.

Add dried fruits to rice.

Dough:

Mix melted butter, eggs, water/milk and salt.

Add flour so the dough is smooth.

Once the dough is smooth and elastic, form it into desired shape.

Form two crust of dough: for the bottom and top.

Place one crust in plate. Press firmly against side and bottom.

Put the filling inside.

Place the second crust on top.

Press edges of the two crusts together to seal them.

Heat oven to 170°C.

Put the pie into hot oven and bake 30-40 min until the pie is golden brown.
